This course explains the USDA’s food plan, food groups and recommended serving sizes and components for each food group for planning meals and snacks in an early childhood education setting. Participants will plan a menu using the USDA Guidelines. Upon successful completion of this course, students should be able to define the effects of improper nutrition on children’s growth and development and create a variety of appropriate meals for young children based on the meal patterns of the CACFP.
